This is a low-sugar jam recipe, meaning it won't last as long as traditional jams. Store it in the fridge and consume within 2 weeks. This recipe makes 4 jars.
1. Add grated apple, dates, and water to a large pot and cook over medium heat for 5-10 minutes to soften the apple.
2. Now add blueberries, lemon juice, and salt and allow to continue cooking for about 20 minutes, on medium to medium low heat, mashing as needed. If you’d like it to be more smooth you can use an immersion blender. Continue cooking until the juices are reduced to your liking. Note that it will further thicken after cooling.
3. Allow to cool completely before storing in jars in the fridge.
